  • 2 diced Tart Apples
  • 1/2 tsp Nutmeg
  • Juice of 1 Lemon
  • 2 Eggs
  • 3 tbsp Maple Syrup
  • 1/2 cup Golden Raisins
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 cup Sweet Potato Puree
  • 2 cups Vanilla Almond Milk
  • 1 cup rinsed, uncooked Quinoa
  • Cooking Spray

  1. Preheat the oven to 350 F.
  2. Prepare a baking dish.
  3. Toss apples with spices and lemon juice.
  4. Whisk sweet potato puree with eggs, maple syrup, and almond milk.
  5. Fold apples into the mixture.
  6. Spread quinoa in the bottom of a dish.
  7. Sprinkle with raisins.
  8. Pour sweet potato mixture on top.
  9. Bake about 50-55 minutes until set.
  10. Serve warm.
