Nothing is more satisfying the day after Thanksgiving than eating leftovers. As do most people, Daphne loves to make a sandwich out of her favorite dishes. For Daphne, it’s all about the turkey, but cranberries are a common Thanksgiving flavor she wanted to highlight as well. With a little creativity, Daphne came up with an incredibly flavorful Cranberry Turkey Salad Panini. Don’t just eat the same plate of meal two days in a row. Put those leftovers to good use!

The Chew: Cranberry Turkey Salad Panini Recipe

Daphne Oz’s Cranberry Turkey Salad Panini recipe is the perfect way to enjoy some of your favorite Thanksgiving flavors in a new way. (elsiehui / Flickr)

  • 1/2 C mayonnaise
  • 3 stalks celery – minced
  • 1/4 C dried cranberries
  • 1 tbsp red wine vinegar
  • Kosher salt and freshly ground black pepper
  • 2 C leftover turkey – shredded, skin removed
  • 2 tsp Dijon mustard
  • 1 Honeycrisp apple – small dice
  • 1/2 small red onion – peeled, finely chopped
  • 4 whole wheat burrito-sized tortillas – 10-inch

The Chew: Cranberry Turkey Salad Panini Recipe Directions

  1. Preheat the panini press
  2. In a large bowl, add the mayonnaise, turkey, celery, Dijon, cranberries, apple, red wine vinegar, and red onion, then toss to combine
  3. Season with salt and pepper
  4. Divide the mixture between the tortillas and put on the bottom half of the tortilla
  5. Roll into a burrito (fold the short sides inward and hold in place, then roll the filled half upward to close)
  6. Brush the outside of the burrito with olive oil and put on the panini press
  7. Let cook for 4-5 minutes until golden and warmed through
