When faced with a pair of die containing an ingredient on each side, Mario Batali had to roll to determine what he would be cooking with. Given that the theme of the show was Thanksgiving stuffing, he could at least narrow it down, which could’ve made things harder or easier! The die determined that he would have to cook with Pullman loaf, ham, sage, and Pistachios. Like the true Iron Chef he is, Mario turned those ingredients into his Cranberry Pistachio Stuffing with Ham. Surprisingly, the dish tasted so good, you wouldn’t even know the ingredients weren’t predetermined!

The Chew: Cranberry Pistachio Stuffing With Ham Recipe

Mario Batali’s Cranberry Pistachio Stuffing with Ham recipe was the result of a challenge, but it’s so good you’ll want to copy the recipe! (mesohungry / Flickr)

  • 1 ham steak – cut into 1/2-inch cubes
  • 3 stalks celery – sliced thin
  • 1 small red onion – peeled, small dice
  • 3/4 C dried cranberries
  • 2 jalapenos – sliced thin
  • 1 Pullman loaf – cut into 3/4-inch cubes
  • Kosher salt and freshly ground black pepper
  • 1/4 C olive oil – divided
  • 2 carrots – peeled, small dice
  • 1 small onion – peeled, small dice
  • 12 leaves sage – chopped
  • 3/4 C whole pistachios – shelled
  • 2 cloves garlic – peeled, sliced thin
  • 4 C chicken stock – divided
  • gravy (recipe below) – to serve

For the Turkey Pan Gravy:

  • 3 tbsp flour
  • 1 1/2 C turkey juices – from the pan
  • Kosher salt and freshly ground black pepper
  • 3 tbsp turkey drippings (from Thanksgiving turkey)
  • 1 tbsp butter
  • 1 C turkey stock or chicken stock

  1. Preheat the oven to 350 degrees
  2. Heat a 12-inch cast iron skillet over medium-high heat
  3. Add 2 tbsp olive oil to the skillet and add the ham steak
  4. Cook the ham steak for about 5 minutes, until browned on all sides
  5. Add the celery, carrot, and onion and cook to soften for about 4 minutes
  6. Add the pistachios, sage, garlic, cranberries, and jalapenos, then mix and season with salt and pepper
  7. Add 2 C of the chicken stock and let cool for 2 minutes
  8. Add the Pullman loaf and toss everything to combine
  9. Add the last 2 C of chicken stock
  10. Season with more salt and pepper then add a drizzle of 2 tbsp of olive oil
  11. Put into the oven and let cook for 35-40 minutes, until golden
  12. Put under the broiler during the last 5 minutes
  13. Remove from the oven and serve with gravy

For the Gravy:

  1. In a large saute pan over medium heat, add the turkey drippings and flour
  2. Stir until a mixture resembling wet sand is formed
  3. Add the butter and melt and incorporate
  4. Add the turkey juices and stock while whisking, then bring to a simmer
  5. Let the mixture cook for about 10-12 minutes to thicken, then season with salt and pepper
  6. Remove and let cool slightly, adding more turkey stock to thin if necessary
