The Chew celebrated Small Plates, Big Taste with guest co-host Ginger Zee, the new meteorologist on Good Morning America. Carla and Ginger worked together on Cheesy Harissa Stuffed Mushrooms, while Hall put Clinton Kelly to work on Crispy Chickpeas.

Harissa is a north African spice that was essential to Carla’s Stuffed Mushrooms Recipe. She also had a parbaking tip to draw out moisture that will change the way you make stuffed mushrooms.

The Chew: Cheesy Harissa Stuffed Mushrooms Recipe + Crispy Chickpeas

Carla Hall got inspired to share appetizer ideas like her Harissa Stuffed Mushrooms Recipe and Crispy Chickpeas on The Chew’s Small Plates, Big Taste show.

  • 1/4 cup chopped Roasted Red Peppers
  • 1/2 cup soft Cream Cheese
  • 1/2 cup Panko Breadcrumbs
  • 2 lb cleaned, stemmed Cremini Mushrooms
  • 1 tbsp chopped Parsley
  • 1 tsp Harissa Spice Mix (see below)
  • Olive Oil

Harissa Ingredients

  • 4 tbsp toasted Cumin Seed
  • 8 tbsp dried Chile Flake
  • 2 tsp Sea Salt
  • 1 1/2 tsp Garlic Powder
  • 4 tsp toasted Coriander Seed
  • 4 tsp Smoked Paprika
  • 1 tsp toasted Caraway Seeds

  1. Preheat the oven on 350 F.
  2. Put a wire rack in a baking sheet.
  3. Combine spice mix ingredients in a skillet on medium, toasting a few minutes until fragrant.
  4. Once cooled, combine with remaining spice ingredients in a grinder.
  5. Arrange mushrooms, stem sides facing down, on the baking sheet.
  6. Let bake 10 minutes to help release any extra unwanted moisture.
  7. Remove and let cool.
  8. Blend roasted peppers with spice mix to create a paste.
  9. Mix in cream cheese.
  10. Transfer to a piping bag.
  11. Flip mushrooms and fill them with cream cheese mix.
  12. Combine parsley with panko and olive oil to coat.
  13. Sprinkle over mushrooms.
  14. Bake 11-14 minutes, until breadcrumbs turn golden.
  15. Let cool before serving.

These spicy baked chickpeas may remind you of wasabi peas. They are a perfect party snack to fit in with this theme of sharable plates. Just make sure the chickpeas are dried before you get to work.

  • 2 14-oz cans drained, rinsed, dried Chickpeas
  • 1 tsp Cumin
  • 1/2 tsp Cayenne
  • 1 tsp Turmeric
  • 1 tsp Coriander
  • 2 tbsp Salt
  • Zest of 1 Lemon

  1. Preheat the oven on 400 F.
  2. Combine spices (except salt and lemon salt) until blended.
  3. Toss spice mix with chickpeas.
  4. Drizzle with oil to coat.
  5. Mix well before spreading on a baking sheet in a single layer.
  6. Bake about 35 minutes, until chickpeas become crispy.
  7. Blend salt with lemon zest to create a lemon salt.
  8. Toss chickpeas with lemon salt.
  9. Let cool before serving.
