Buddy Valastro, The Cake Boss, joked that because he’s a baker, he knows he’s always welcome to every party he goes to. The only downside is that because he’s expected to bring a dessert, it means always having to come prepared! Buddy joined The Chew to share one of his personal favorite, original recipes from his bakery. He explained that his bakery will actually be closed on Christmas Day, but because his show isn’t filmed around the holidays, he gets to actually spend time doing what he loves best, baking! He was kind enough to share his Banana Cream Pie recipe and it’s one you’ll definitely want to keep!

The Chew: Banana Cream Pie Recipe

Buddy Valastro’s Banana Cream Pie recipe is actually pretty simple to prepare but too tasty to last long! ([email protected] / Flickr)

  • 1 tbsp pure vanilla extract
  • 1 1/2 C sugar – divided
  • 2 tsp unsalted butter
  • 1 9-inch pie shell – blind-baked and cooled (or store-bought)
  • 1 large lemon
  • 2 1/2 C whole milk
  • 5 extra-large egg yolks
  • 2/3 C cake flour – sifted
  • 3 C heavy cream
  • 3 large bananas – peeled
  • 1 large strawberry (optional)

For the Custard:

  1. In a large, heavy saucepan, add the vanilla and milk and bring to a simmer over medium-high heat, then turn off the heat
  2. Put the eggs in a large bowl and whisk one cup of sugar into the eggs
  3. A little at a time, carefully add the cake flour into the eggs while whisking
  4. Ladle 1/4 C of the hot milk into the egg mixture, whisking to incorporate
  5. Repeat with another ladle of hot milk
  6. Pour the egg mixture into the milk in the saucepan and set over medium-low heat
  7. Cook, whisking constantly, scraping the bottom and sides of the pan as it cooks for about a minute then whisk another 30 seconds
  8. Whisk in the butter, then lower the heat and whisk for 1-2 more minutes, until thickened
  9. Remove the pan from the heat and let the custard cool before transferring to a bowl
  10. Cover the bowl loosely with plastic wrap and chill for at least an hour

For the Whipped Cream:

  1. Put the cream and the last 1/2 C sugar in a bowl and mix with a hand mixer on high speed until medium peaks form
  2. Put the custard in a mixing bowl, then whisk to smooth it
  3. Use a rubber spatula to fold in half the whipped cream

To Assemble:

  1. Peel two bananas and slice them crosswise over the French cream
  2. Transfer the banana cream to the pie shell and scrape as much cream out of the bowl as possible
  3. Transfer the rest of the whipped cream to a pastry bag with a star tip
  4. Pipe circles of cream all over
  5. Peel the last banana and slice it crosswise on an angle into 8 pieces
  6. Mix the sliced banana with lemon juice to avoid browning
  7. Arrange the banana slices around the edge of the pie and place the strawberry, if using, at the center of the pie
