The Chew: Apple Dumplings Recipe

Mario Batali’s Apple Dumplings are a surprisingly simple yet seemingly gourmet fall dessert you can prepare at home! (rexroof / Flickr)

For the Basic Pie Crust:

  • 1 tsp Kosher salt
  • 3 sticks unsalted butter – chilled, cut into small cubes
  • 3 1/2 C all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 C ice water + more as needed

For the Apple Dumplings:

  • 3/4 C packed light brown sugar
  • 1 tsp freshly grated nutmeg
  • 1/2 C raisins
  • 3/4 C heavy cream – divided
  • 6 medium Granny Smith or Braeburn apples – peeled, cored, left whole
  • 1 tsp ground cinnamon
  • 1/2 tsp Kosher salt
  • 3 tbsp unsalted butter – cut into pieces

The Chew: Apple Dumplings Recipe Directions

  1. In a large bowl, add the salt, flour, and baking powder
  2. Add the butter and toss until coated in the flour
  3. Cut the butter using a pastry cutter or the back of a fork, until the butter looks like tiny bits incorporated into the dough
  4. Add 6 tbsp of ice water and mix until the dough comes together
  5. Add more water, one tbsp at a time, if needed
  6. Remove the dough to a floured surface
  7. Cut in half to make two disks
  8. Dust with more flour, then wrap in plastic wrap in place in the fridge for at least 2 hours or up to 2 days

For the Apple Dumplings:

  1. Preheat the oven to 400 degrees
  2. Spray a baking sheet with cooking spray
  3. On a floured surface, roll the pie dough to 1/4-inch thick, then cut into six 6-inch squares
  4. Put an apple in the middle of each square
  5. In a small bowl, add the cinnamon, sugar, salt, and nutmeg
  6. Divide the sugar mixture, butter and raisins among the apples, stuffing it into the core of the apple and letting it overflow
  7. Brush the edges of the dough with heavy cream
  8. Bring the corners of the dough together at the top of each apple then pinch to bring the edges together
  9. Put the dumplings on the baking sheet and put in the freezer for 15 minutes to set
  10. Brush the outside of each dumpling with cream and bake for 20-25 minutes, until the crust is golden
  11. Whip the last 1/2 C heavy cream to soft peaks with a hand mixer, then spoon over the warm apples before serving
