Michael Symon was then joined by Christie Brinkley, the 62-year-old ageless beauty who has appeared on more than 500 magazine covers. Because she typically enjoys a plant-based vegan diet, Michael wanted to put together something that was both crispy and diet-friendly. Christie helped him put together a refreshing Lentil and Butternut Squash Salad that she admitted she would even enjoy for breakfast.
