  • 2 large onions – sliced thin
  • 1 bay leaf
  • 1/4 C maple syrup
  • 12 slices smoky bacon
  • 12 leaves fresh sage – sliced thin
  • 1 tbsp olive or canola oil
  • 6 onion or Kaiser rolls – split
  • 2 tbsp butter
  • salt and pepper
  • 1/2 C chicken or beef stock
  • 1/2 C grainy Dijon mustard
  • 2 lbs white or dark ground turkey
  • 1/4 Worcestershire sauce
  • 1/2 lb smoked blue cheese or blue cheese crumbles
  • sliced dill or bread-and-butter pickle chips

  1. Preheat the oven to 375 degrees
  2. In a skillet over medium heat, melt the butter then add the onions, salt, and pepper
  3. Cook for about 20 minutes until soft and caramelized
  4. Add the maple syrup, stock, and mustard, then simmer for another 15 minutes while you cook the burgers and bacon
  5. Bake the bacon on a slotted pan or a rack set inside a baking sheet for about 18 minutes or until crispy
  6. Combine the Worcestershire sauce, salt, pepper, sage, and meat
  7. Shape the meat mixture into six patties that are thinner in the middle to ensure even cooking
  8. Heat a cast-iron skillet over medium-high heat and add oil
  9. Cook the patties for 12-15 minutes, turning occasionally
  10. Add pickle slices to the buns, then add the burger patties
  11. Top the patties with blue cheese, bacon, and the maple onions
