  • 1 8-oz hot sopressata salami
  • 1 bunch basil
  • 1 bunch broccoli rabe/rapini
  • 1 lb spaghetti
  • 1 chunk ricotta salata or Pecorino Romano cheese – for grating

  1. Bring a large pot of water to a boil for the pasta
  2. Heat a few inches of water in a deep skillet and salt liberally once the water boils
  3. Trim the broccoli rabe of its tough ends and chop the leaves and florets into bite-size pieces
  4. Cook for about three minutes in the skillet then cold shock and pat dry
  5. Dump the water, then wipe the pan dry
  6. Peel the casing off the salami then grate it with a box grater
  7. Heat extra-virgin olive oil in the skillet over medium-high heat
  8. Add the salami and stir for a couple minutes until crispy
  9. Add the rapini and garlic, then season with salt and chili flakes to taste
  10. Salt the water for the pasta and cook the pasta for a minute less than package directions
  11. Add 1 C of the starchy cooking water to the broccoli rabe and salami, then drain the spaghetti
  12. Toss with the salami and broccoli rabe
  13. Wilt in a lot of fresh torn basil
  14. Top with cheese and serve
