Rachael Ray: Sourdough Patty Melt Reubens Recipe

Rachael Ray’s Sourdough Patty Melt Reubens are the perfect mash up of two popular and delicious sandwiches! (pointnshoot / Flickr)

  • 1 1/2 tsp cumin seed
  • 1 tbsp Worcestershire sauce
  • kosher salt and coarse black pepper
  • 3 tbsp pickle relish (Wickle’s brand, if possible)
  • a few dashes Chipotle Tabasco or other hot sauce
  • olive or vegetable oil – for drizzling
  • 1/2 lb each deli-sliced Swiss cheese and Provolone cheese
  • 8 slices sourdough bread
  • 1 1/2 tsp caraway seed
  • 1 1/2 lbs 80% lean ground beef
  • 1/2 small onion – peeled
  • 1 C sour cream
  • 1/4 C ketchup (Sir Kensington’s brand, if possible)
  • 1 lb sauerkraut – drained
  • dill or garlic dill pickle chips/slices
  • softened butter

Rachael Ray: Sourdough Patty Melt Reubens Recipe Directions

  1. In a small, stainless steel skillet, toast the cumin and caraway seeds until fragrant
  2. Grind the toasted seeds in a spice grinder, then save
  3. Heat a cast-iron or 2-burner griddle or a cast-iron skillet over medium-high heat
  4. Put the beef in a mixing bowl, then add the cumin and caraway
  5. Add the Worcestershire sauce, then grate the onion directly over the bowl
  6. Season the meat with salt and pepper
  7. Use your hands to mix the meat until the ingredients are incorporated, then shape into 4 large, thin patties that are thinner in the middle for even cooking
  8. In a medium-size mixing bowl, mix the relish, sour cream, hot sauce, and ketchup
  9. Add the sauerkraut and mix
  10. Add oil to the hot griddle or pan, then cook the patties for about 4 minutes per side
  11. Remove, then wipe the griddle or pan clean
  12. Lower the heat to medium
  13. Spread a light and even amount of butter on one side of each slice of bread
  14. Put the sandwiches together with the buttered side of each slice facing out: bread, then pickles, provolone, the burger patty, sauerkraut, then Swiss
  15. Griddle the sandwiches until deep golden in color and crispy
  16. Cut in half and serve
