Rachael Ray: Pork Chops & Broccoli + Red Wine Onion Agrodolce

  • 4 tbsp butter – divided in half
  • 1 tsp red chili flakes
  • 1/2 C red wine
  • 1 C broccoli florets – cut in half
  • salt and pepper
  • 3 4-oz pork chops – butterflied
  • 1 C sliced onions
  • 2 tsp brown sugar
  • 1 C beef stock
  • olive oil

  1. In a pan over medium-high heat, drizzle some olive oil
  2. Season the pork chops with salt and pepper, then lay them in the pan
  3. Sear each side for a minute then remove to a plate
  4. In the same pan, add half the butter
  5. Once melted, add the onions and increase the heat to high
  6. Cook for three minutes, stirring
  7. Add the brown sugar, chili flakes, and wine, then let the mixture reduce for 2 minutes
  8. Pour in the beef stock
  9. When the stock reduces by half, add the other half of butter and the broccoli
  10. Put the chops back into the pan
  11. Let the pork chops cook in the sauce for 4-6 minutes, letting the sauce reduce and thicken
  12. Adjust the seasoning as needed then serve hot
