If you ask me, just the word burrito by itself is enough of a reason to get excited. So you can only imagine what happened when I learned that Rachael Ray and Bob Harper would be making one with nine layers! This Nine-Layer BBQ Chicken Burrito is a true dream come true for all Mexican food lovers out there! In case you haven’t figured it out by now, Rachael can’t stand the thought of settling for boring, bland food. It’s pretty much a waste of calories, right? If you’re going to dig into a meal, you better make sure it’s one that will make your taste buds explode! Not surprisingly, this recipe doesn’t call for the typical burrito ingredients, but instead, barbecue chicken! Thankfully, the recipe also uses a rotisserie chicken for an easy shortcut!

Rachael Ray: Nine-Layer BBQ Chicken Burrito Recipe

For the Barbecue Chicken:

  • 1 small onion – finely chopped or grated
  • salt and pepper
  • 2 tbsp light brown sugar
  • 2 tbsp Worcestershire
  • 1 C tomato sauce or ketchup
  • 1 store-bought rotisserie chicken
  • 1 tbsp olive or vegetable oil
  • 3 large cloves garlic – grated or pasted
  • 2 tbsp cider vinegar
  • 2 tbsp smoked soy sauce or Tamari
  • 1 tbsp olive or vegetable oil
  • 3 large cloves garlic – grated or pasted
  • 2 tbsp cider vinegar
  • 2 tbsp smoked soy sauce or Tamari
  • 1 tsp coarse black pepper
  • 1/2 C chicken stock

For the Black Beans:

  • 2 large cloves garlic – chopped
  • 1 tsp ground cumin
  • 1/2 small onion – finely chopped
  • salt
  • 1 jalapeno pepper – finely chopped
  • 1 can black beans – drained
  • 1 tsp cayenne pepper sauce (Frank’s Red Hot)
  • 12 slices meaty bacon
  • 2 C smoked cheddar – shredded
  • iceberg or gem Romaine lettuce – chopped or shredded
  • 4 large flour tortillas – any flavor
  • pickled jalapenos
  • tomato – chopped, seeded

For the Chipotle Guacamole:

  • 1/2 small red onion – finely chopped
  • juice of 1 lime
  • 2 avocados
  • 2 tbsp cilantro – chopped
  • 1 large clove garlic – grated or pasted
  • 2 tbsp pureed chipotle in adobo
  • salt

Rachael Ray: Nine-Layer BBQ Chicken Burrito Recipe Directions

  1. Preheat the oven to 375 degrees
  2. Place a medium-sized skillet over medium-high heat and add the oil
  3. Saute the garlic and onions for 3-5 minutes
  4. Season with salt and pepper, then add sugar, vinegar, Worcestershire, soy, black pepper, tomato sauce, and stock
  5. Simmer for 15 minutes to thicken
  6. Pull the meat from the chicken carcass and throw away the skin and bones
  7. Add the meat to the sauce and keep warm
  8. In a second skillet, saute the garlic, onions, and jalapeno pepper for 3-5 minutes to soften
  9. Add the salt, pepper, and cumin, then pour in 1/2 C water
  10. Simmer the mixture for another 5 minutes, then add the hot sauce and black beans
  11. Simmer over low heat to thicken
  12. Bake the bacon on a slotted pan or wire rack set inside a rimmed baking sheet for 16-18 minutes, until crispy
  13. Chop the crispy bacon slices into 1-inch pieces
  14. In a small bowl, mix the garlic, red onion, lime juice, salt, and chipotle in adobo
  15. Add the avocado and cilantro, then mash to create your guacamole
  16. Char the tortillas on each side over an open flame or in a dry, stainless skillet
  17. To build the burritos: fill the tortillas with smoked cheese, chicken, black beans, bacon, lettuce, tomato, pickled jalapenos, and guacamole
  18. Wrap, roll, then cut in half and serve
