  • 1 C water
  • 1/2 tsp salt
  • 1 C roasted shiitake mushrooms
  • 1/2 C roasted red onions
  • 1 C chickpea flour
  • 1 1/2 tbsp extra-virgin olive oil + more to drizzle in the pan
  • 1/2 tsp za’atar
  • 1 C roasted broccoli rabe

  1. Whisk the chickpea flour, salt, olive oil, za’atar, and water in a small bowl
  2. Let rest for 1/2 to 2 hours in the fridge, allowing time for the water to be absorbed
  3. Heat the oven to 450 degrees
  4. Preheat a 10-inch pan over medium-high heat for 5 minutes
  5. Drizzle about a teaspoon of olive oil in the pan
  6. Quickly whisk the chickpea mixture, then pour about 1/3 of it into the hot skillet
  7. Cook for approximately 8-10 minutes, until cooked through, to make the flatbread
  8. Remove to a plate and top with warm veggies
