Jake Smollett’s Cheesy Herb Manicotti Casserole is so hearty and delicious, you;ll want to prepare this meatless dish every chance you get! (jeffreyww / Flickr)

  • 1 lb block sharp white cheddar cheese – shredded
  • 2 8-oz packages manicotti pasta (21 tubes)
  • 1/2 lb block smoked white cheddar cheese – shredded

For the Pesto:

For the Crunchy Topping:

  • 1/2 tbsp dried oregano
  • 1/2 C Kraft parmesan cheese
  • 1/4 C whole milk
  • 1/2 tbsp dried basil flakes
  • 1 tsp chili flakes
  • 1/2 C traditional panko breadcrumbs

  1. Bring eight qts of water to a boil in a large pasta pot
  2. Cook the manicotti pasta to al dente, then drain under cold water
  3. Preheat the oven to 350 degrees
  4. Mix the sharp and smoked cheddar cheeses together in a large bowl
  5. For the pesto, chop the basil and oregano, then add to the food processor with parmesan cheese, pine nuts, milk, and salt
  6. Process into a paste
  7. For the topping: in a medium bowl, mix the dried oregano and basil, parmesan cheese, chili flakes, and breadcrumbs
  8. In a 9×13-inch baking dish, arrange one layer of the manicotti pastaa, opening the tubes to make a flat pasta like lasagna
  9. Add a layer of the cheese blend then another layer of pasta
  10. Add another layer of cheese then another layer of pasta, then spread the pesto in an even layer on top
  11. Top the pesto with another layer of cheese and then one more layer of noodles and cheese
  12. Spread the topping over the four layers and pour in 1/4 C milk along the edge of the dish
  13. Bake for 30-35 minutes
