  • 1/2 lb cremini mushrooms – sliced
  • 4 cloves garlic – chopped
  • salt
  • 1/2 C dry sherry or white wine
  • 1 C chicken stock
  • 2 C shredded white sharp cheddar
  • 1 lb short-cut pasta (cavatappi, penne, or shells)
  • 1 container French’s fried onions
  • 4 tbsp butter – cut into pieces
  • 2 large shallots – chopped
  • 2 tbsp fresh thyme – chopped
  • 3 tbsp flour
  • 1 pint half-and-half
  • white pepper
  • 1/2 C grated parm
  • 12 oz haricots verts

  1. In a large skillet, melt the butter over medium to medium-high heat
  2. Add the mushrooms and cook, stirring occasionally, for 3-5 minutes, until browned
  3. Add the garlic, shallots, and thyme, then season with salt
  4. Cook for 2-3 minutes, stirring occasionally, to soften the shallots
  5. Sprinkle with the flour and stir for a minute
  6. Stir in the sherry and the half-and-half then add the stock
  7. Bring to a bubble and cook for 3 minutes while stirring
  8. Season with white pepper
  9. Add in both cheese and stir for 2 minutes until melted
  10. Meanwhile, bring a large pot of water to a boil for the pasta
  11. Salt the water then add the pasta and cook for 5 minutes
  12. Add the green beans to the water and cook for another 2-3 minutes
  13. Drain the pasta and green beans in a colander then mix them into the sauce
  14. Transfer to a casserole dish and top with fried onions
