  • 4 C cheese sauce
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 4 scallions – chopped
  • 1/2 C parmesan cheese
  • 1 lb whole-wheat elbow pasta
  • 1 roasted red pepper from a jar
  • 1 tsp cayenne pepper
  • 1 4-oz jar pimento peppers – chopped
  • 2 C whole wheat pita chips – crushed
  • chives – to garnish

Rachael Ray: Grant’s Healthy Pimento Mac Recipe Directions

  1. Preheat the oven to 375 degrees
  2. Bring a large pot of water to a boil
  3. Thoroughly salt the water, then cook the pasta 2 minutes short of al dente
  4. Drain and add back to the pot
  5. Add the cheese sauce to a blender, then add the paprika, roasted red pepper, cayenne, and garlic powder
  6. Blend until smooth, then add the cheese sauce, scallions, and chopped pimento peppers to the pot with the pasta
  7. Toss until coated, then pour into a large casserole dish
  8. Top with Parmesan cheese and pita chips
  9. Bake for 20 minutes, until the mac is brown and bubbly
  10. Garnish with chives, then serve
