Kentucky girl Damaris Phillips may have just proven herself as a girl who knows how to throw one heck of a party! Whether it’s Derby time in her hometown of Louisville or “friends-giving” with her friends in New York, Damaris certainly knows how to have a good time. But like any chef, Damaris likes to make sure she has some tasty options available for her guests to munch on. She joined Rachael Ray to share some of her favorite no-cooking-required appetizers, to make serving party food an absolute breeze! Her Country-Ham Wrapped Dates, Rosemary and Orange Marinated Olives, and Biscotti-Salami Crostini are each delicious in their own way, and together make for one elegant and delicious spread.

Rachael Ray: Easy No-Cook Appetizers + Crostini, Marinated Olives

Damaris Phillips joined Rachael Ray to share some of her easy, no-cooking-required appetizer recipes that anyone can prepare in just minutes! (winecountrymedia / Flickr)

Country Ham-Wrapped Dates Ingredients:

  • 15 slices country ham or Virgina, sliced very thin – cut in half lengthwise
  • 30 dates – pitted
  • 2-3 tsp jalapeno- or serrano-infused oil

Rosemary & Orange Marinated Olives Ingredients:

  • zest and juice of 1 orange
  • 1 sprig rosemary – stem removed or 1/2 tsp ground rosemary
  • 1/2 tsp salt
  • 1/2 C extra-virgin olive oil
  • 1 clove garlic – peeled
  • 1/2 to 1 tsp chili flakes (optional)
  • 1 16-oz jar mixed olives in water with pits

Biscotti-Salami Crostini Ingredients:

  • 2 8-oz packages herb cream cheese – whipped
  • 24 small, store-bought biscotti (any variety without chocolate)
  • 24 slices salami

Country Ham-Wrapped Dates Directions:

  1. Lay a few pieces of the ham flat on a cutting board
  2. Put a date at the end of each piece of ham and roll it up
  3. Repeat until the dates are rolled in ham
  4. You can serve them as is, seam side-down with a drizzle of the infused oil or bake in a 350 degree oven for 12-15 minutes before drizzling with the infused oil

Rosemary & Orange Marinated Olives Directions:

  1. In a heavy-bottomed saucepan, combine the orange juice and zest, olive oil, rosemary, garlic clove, salt, and chili flakes
  2. Bring to a simmer over medium heat
  3. Cook for 1-2 minutes to let the spices and herbs soften, set aside
  4. Drain the olives and add them to the warm olive mixture
  5. Let sit for at least 15 minutes to soak up the flavors
  6. Serve right away or store covered in the fridge for up to a week

Biscotti-Salami Crostini Directions:

  1. Lay the biscotti flat on a cutting board
  2. Spread a spoonful of the cream cheese in a thick smear over the biscotti
  3. Roll the salami and place one piece on top of each biscotti
  4. Arrange on a platter and serve
