Rachael Ray: Creamy Cheddar Cauliflower + Hazelnut Crumb Recipe

Clodagh McKenna’s Creamy Cheddar Cauliflower with Hazelnut Crumb is a lighter, guilt-free side dish perfect for adding to your Thanksgiving Day spread. (thebokeeffect / Flickr)

  • 2 tbsp water
  • 3/4 flour
  • 8 oz cheddar cheese – shredded
  • 1 large head cauliflower
  • 6 tbsp butter
  • 1 3/4 C milk
  • 1 tsp freshly grated nutmeg

For the Topping:

  • 1/2 C breadcrumbs
  • sea salt and freshly ground black pepper
  • 1/2 C chopped hazelnuts
  • 1/2 C parmesan cheese

  1. Remove the outer leaves from the cauliflower and coarsely chop
  2. Separate the cauliflower into florets
  3. Put the cauliflower and chopped leaves into the slow cooker with approximately an inch of water
  4. In a saucepan, melt the butter and whisk in the flour
  5. Cook for 2-3 minutes, stirring constantly
  6. Add the milk and keep whisking to be sure no lumps form
  7. Stir in the nutmeg and grated cheese
  8. Pour the cheddar cheese sauce over the cauliflower and toss
  9. Cook on high for 2-3 hours or low for 3-4 hours

For the Hazelnut Topping:

  1. Toast the hazelnuts and bread crumbs for 10 minutes in a hot oven
  2. Mix with the Parmesan cheese and set aside
  3. Serve the cheesy cauliflower with the topping sprinkled on top
