Carla was thrilled to show Rachael how she makes some of her favorite Southern recipes, including her Tangy Chow-Chow Relish and Skillet Cornbread. But while those tasty recipes aren’t meant to be the star of a meal, Carla revealed a dish that most certainly is! Her Southern Soup Beans are the epitome of comfort food! Rachael Ray: Carla Hall Southern Soup Beans Recipe

Carla Hall’s Southern Soup Beans will soon become your favorite, go-to comfort food! Let these beans warm you from the inside out! (southernfoodwaysalliance / Flickr)

  • 2 whole carrots – peeled
  • 1 celery stalk
  • 2 garlic cloves – sliced
  • 3 tbsp olive oil
  • 1/2 tsp cayenne pepper
  • 1 lb dry beans (pinto, black-eyed peas, navy beans, or lima beans)
  • 1 medium onion – finely diced
  • 1 bay leaf
  • 2 smoked serrano chile peppers
  • 1/2 tsp ground cumin
  • salt and pepper
  • diced raw onions (to garnish)
  • chow-chow (to garnish)

Carla Hall: Rachael Ray Southern Soup Beans Recipe Directions

  1. Rinse, drain and pick through the beans to pick out any stones or debris
  2. Cover the beans with 8 C of water and let them soak overnight
  3. Drain, rinse and put the beans into a large soup pot
  4. Cover with 8 C of fresh water
  5. Add the onion, carrots, celery, garlic, bay leaves, and serrano chile peppers
  6. Bring to a boil then reduce to a simmer and cook, uncovered, for 1 1/2 to 2 hours, until creamy and thick (don’t let it boil)
  7. Stir in the cumin, olive oil, salt, cayenne, and pepper
  8. Serve topped with diced raw onion, cornbread, and chow chow
