Rachael Ray’s co-host for the day was health and fitness expert Bob Harper. Bob brought with him a recipe for low-carb Meatloaf Meatballs, and prepared a homemade Balsamic ‘Ketchup’ and Roasted Squash to serve along with them. He found a unique way to replace the breadcrumbs in his tasty meatballs which means you can enjoy more without the guilt! Then, Rachael Ray shared a high-protein, low-carb dish of her own: Beef Paillard!

Rachael Ray: Beef Paillard Recipe

Rachael Ray was then inspired by the more traditional chicken paillard, or pounded chicken, to make a similar dish with beef. She chose a lean steak and sliced it up before pounding it until it became a thin, larger piece of beef. This is a great trick to make your meat go further, which means you feel like you’re eating more, when you’re really not! Plus, the lean cut saves you fat and calories, and the salad she served alongside, make this dish the whole family will love, and you can feel good about!
