Live with Kelly: Avril Lavigne Performs “Here’s to Never Growing Up”

Kelly Ripa and co-host Mark Consuelos welcomed Avril Lavigne to the stage to perform her brand new single “Here’s to Never Growing Up.”

I liked the song. The acoustic guitars in the beginning really bring the song to your attention and it seems like Lavigne has grow up as a singer songwriter. She has moved away from teenage angst and into more grown up issues.

Kelly congratulated her on the anthems she always seems to be penning and she congratulated her on her engagement to Chad Kroeger, frontman for Nickelback. They got together to work in the studio and she said the proposed right in the studio.

And did you see her ring? My car isn’t that big. It doesn’t look like Kroeger will be sleeping on any couches. Mark Consuelos on the other hand…

Kelly Ripa and Mark Consuelos continued their search for the best food truck food and they might have found the winner. They made some BBQ  brisket tacos with The Peached food truck, all the way from Austin, Texas.

Kelly Ripa continued her search for the best food truck recipe and made The Peached’s BBQ brisket taco recipe. Also, Avril Lavigne performed.

The Peached Tortilla BBQ Brisket Taco Ingredients:

BBQ Brisket Taco:

  • Brisket, 3-4 lb piece
  • 12 6in Flour Tortillas

Braising Liquid: 

  • Maker’s Mark, 1 cup
  • Beef Broth, 3 cups
  • Water, 1 cup
  • Yellow Onion, 1 chopped
  • Garlic Cloves, 4, whole or chopped

Rub: 

  • Kosher Salt, 2 tbsp
  • Black pepper, 1 tbsp
  • Mustard Powder, 2 tsp
  • Chili Powder, 2 tbsps
  • Garlic Powder, 1 tbsps
  • Onion Powder, 1 tbsp
  • Brown Sugar, 4 tbsp
  • Bay Leaves, 1

The Peached Tortilla BBQ Brisket Taco Directions:

  • Preheat oven to 375 degrees.
  • Trim brisket to your desired amount of fat.
  • Grind rub ingredients in spice grinder, then spread over brisket and rub into the meat.
  • Turn cast iron skillet on high heat and sear dry-rubbed brisket on both sides for 8 to 10 minutes then set aside.
  • Combine braising liquid ingredients into oven proof pot.
  • Add brisket piece. The braising liquid should come halfway up the brisket piece but not cover the brisket.
  • Place in the oven for 3 to 5 hours.

The Peached Creamy Apple Slaw Recipe

The Peached Creamy Apple Slaw Ingredients:

  • Fennel, 1, 1 cup, sliced thin
  • Apple, Green, 1, julienned
  • Cabbage, Green, 1 cup, sliced thin on mandolin
  • Carrots, Shredded, 1/2 cup
  • Rice Wine Vinegar, 1/8 cup
  • Lemon Juice, 1/8 cup
  • Mayonnaise, 3/4 cup
  • Sugar, 1/4 cup
  • Kosher Salt & Black Pepper to taste

The Peached Creamy Apple Slaw Ingredients:

  • Mix all the ingredients together in a large mixing bowl. The tacos are topped with this slaw.

The Peached Smoky Roasted Peach BBQ Sauce Recipe

The Peached Smoky Roasted Peach BBQ Sauce Ingredients:

  • Peach Preserves, 6 oz
  • Ketchup, 12 oz
  • Onion half, chopped
  • Kosher Salt, to taste
  • Black Pepper, to taste
  • Vegetable Oil, tablespoon

The Peached Smoky Roasted Peach BBQ Sauce Directions:

  • Heat oil on medium heat then add onions. Saute onions until they become translucent.
  • Add peach preserves and ketchup. Turn heat down to low and simmer sauce for 15 to 20 minutes.
  • Add salt and pepper to taste.
  • Strain the sauce after it has simmered.
