With students going back to school, that means it’s time to get back in the habit of packing school lunches. But will you be going with peanut butter and jelly again this year, or mixing it up with something fresh? Food & Wine magazine’s Gail Simmons dropped by Times Square to share some ideas on Good Morning America. This segment included her Slow Cooker Meatballs Recipe and Tangy Ranch Dip Duo Recipe.

GMA: Slow Cooker Meatballs in Tomato Sauce Recipe

GMA: Slow Cooker Meatballs Recipe & Tangy Ranch Dip Duo Recipe

Gail Simmons shared her Slow Cooker Meatballs Recipe & Tangy Ranch Dip Duo Recipe on Good Morning America.

Gail Simmons said her idea for this recipe was to make it easy on families with busy schedules and multiple obligations. This is truly a “set it and forget it recipe” that you can have going on in the background.

Ingredients – Sauce

  • 2 cans Crushed Tomatoes (28 ounces each)
  • 1 clove Garlic
  • 2 tablespoons Tomato Paste
  • Chili Flakes
  • Basil
  • Olive Oil

Ingredients – Meatballs

  • 2 pounds Ground Turkey
  • 3 cloves Garlic, chopped
  • 4 tablespoons Breadcrumbs
  • 4 tablespoons Parmesan Cheese
  • 1 Egg
  • Salt & Pepper

Directions – Sauce

  1. Combine ingredients in crock pot. Hand smash tomatoes.
  2. Cook on high for about three hours.

Directions – Meatballs

  1. Combine ingredients and mix well.
  2. Form into small, bite-sized meatballs. Do not pack too densely.
  3. Add meatballs to cooked sauce.
  4. Simmer in crock pot for at least one more hour.

Good Morning America: Meatball Hero & Lettuce Wraps

These meatballs are versatile and can be used in a variety of recipes, including hero sandwiches and lettuce wraps. Gail said you can even have them by themselves as an entree. Gail’s meatballs and sauce can be cooked and stored up to two days before use.

GMA: Tangy Ranch Dip Duo Recipe

Eating your vegetables is important, but kids aren’t always making the healthiest choices on their own. Gail whipped up a Tangy Ranch Dip Duo that will make kids happy about getting their veggies.

Ingredients

  • 2 cloves Garlic
  • 3/4 cup Buttermilk
  • 2 1/4 cup Greek Yogurt
  • 3/4 cup Mayonnaise
  • 1 teaspoon Hot Sauce
  • 1 tablespoon Canola Oil
  • 2 tablespoons Tomato Paste
  • Salt & Pepper

Directions

  1. Combine minced Garlic and salt into a paste.
  2. Add Yogurt, Mayo, Pepper, and Buttermilk with Garlic mixture.
  3. Season with salt and divide mixture evenly into two small bowls.
  4. Heat a pan on low. Brown oil, tomato paste, and hot sauce for about two minutes.
  5. Let cool. Then combine with one of the two dip bowls.
  6. Serve dips together with choice of fresh veggies.
  7. Prepare up to three days in advance.
