Maria Loi baked some Spanakopita Triangles with Greek yogurt. The Greek recipe looks simple and delicious for a party snack or hors d’oeuvre.

Today, Maria Loi cooked up some Spanakopita Triangles, which are homemade spinach pies. She has secrets to keeping them from getting too dry. They take about an hour to make and this recipe will serve over eight people. Here’s what you will need:

Mario Loi Spanakopita Triangles Ingredients: 

  • 4 10 ounce bags of spinach – remove stems and chop
  • 12 ounces feta cheese – crumbled
  • Large onion – pureed
  • 1 bunch of dill – chopped
  • 1 cup of olive oil
  • 1 box of phyllo, Apollo #7 – thaw, cut into 3″ strips, brush with olive oil
  • Plain Greek yogurt

Take a large sauté pan and sweat the onions until they are translucent. Add in the spinach and cook until it is just wilted. This removes the extra moisture from the onions and spinach.

Next, remove the spinach/onions from the heat and drain. Place this in a bowl and combine with feta, dill and olive oil.

Take your pre-cut phyllo strips, you should get about five to six per sheet, and place a spoonful of the Greek yogurt and the spinach filling at the end of the strip. Fold like a flag and brush with more olive oil to seal. The Greek yogurt inside will keep the pies from getting too dry.

Place the pies on parchment paper on a sheet tray. Back until they are crispy, golden and serve with Greek yogurt for dipping.
