At least, that was the idea. The quesadilla recipe requires cooked chicken breast, which I guess means it’s a great way to use up some leftovers if you cook extra chicken one night. As for the salmon dish, it cooks for about five minutes, which still isn’t too terrible as such things go. I guess the advantage is you don’t have to use your oven, but fish cooks fast no matter how you prepare it.

Dr Oz: Cheesy Chicken Quesadillas Recipe by Jessica

Ingredients

  • 2 Chicken Breasts, cooked
  • 15 ounces Black Beans, drained & rinsed
  • 1 cup Fiesta blend Cheese
  • 1 teaspoon Garlic Powder
  • Cilantro & Lime Juice
  • Whole Wheat Tortillas
  • Olive Oil
  • Salt & Pepper

Directions

  1. In a large bowl, combine Chicken with Lime Juice, Olive Oil and spices (except Garlic Powder) until coated. Set aside.
  2. In a food processor, combine beans with additional Lime Juice and salt until well mixed.
  3. Combine Cheese and Cilantro in a separate bowl; add Lime Juice to taste.
  4. Take Chicken out of marinade and shred it into bite-size pieces.
  5. Combine ingredients on one half of a tortilla. Fold over and microwave for 45-60 seconds.
  6. Repeat the previous step for remaining tortillas.

Dr Oz: Ginger Salmon Recipe by Barbara

Ingredients

  • 1/2 lb. Salmon
  • 2 cloves Garlic
  • Cilantro & Thyme
  • 5 slices Ginger
  • 1 Orange
  • Olive Oil
  • Salt & Pepper

Directions

  1. Season Salmon and add spices to a microwave-safe bowl.
  2. Squeeze fresh orange juice into bowl.
  3. Add Ginger slices and Olive Oil to the mix.
  4. Massage mixture into fish for a moment for better flavor.
  5. Cover and steam in your microwave for about five minutes.
  6. Serve with chef’s choice of veggies.
