Dr Oz: Carb-Free Sandwiches

Dr Oz shared that whether you’re going gluten-free, paleo, or just trying to cut back on carbs, you don’t actually have to give up sandwiches. There are many carb-free options that have been taking the internet by storm. He welcomed a panel of food bloggers to his show to share how you can make them yourself. He also put together a few of his audience members to taste test the recipes to make sure they were delicious enough to try yourself.

Dr Oz first heard from the blogger behind Weelicious, Catherine McCord. Catherine made a great cauliflower crust grilled cheese that made for a delicious sandwich with no carbs! The recipe called for making your own bread out of cauliflower, and then using that bread to make a delicious grilled cheese.

Dr Oz: Cauliflower Crust Grilled Cheese Recipe Ingredients

For the bread:

  • 1 egg – lightly beaten
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 small head cauliflower – cut into small florets
  • 1/2 C shredded mozzarella cheese
  • 2 tbsp olive oil

For the sandwiches:

  • 2 slices cauliflower crust “bread”
  • 1/3 C sharp cheddar cheese – grated/shredded & at room temperature
  • 1 tbsp butter – at room temperature

For the bread:

  1. Preheat oven to 450 degrees
  2. Line a baking sheet with parchment paper & grease with olive oil
  3. Use a food processor to grind up the cauliflower florets until it looks like rice
  4. Transfer cauliflower to a microwave-safe bowl & microwave on high for 8 minutes – until cooked
  5. Squeeze out all the excess water from the cauliflower
  6. Transfer cauliflower to a mixing bowl & add egg, mozzarella, salt, & pepper – mix well
  7. Shape mixture into squares & lay on that parchment paper
  8. Place in oven & bake for 16 minutes or until golden
  9. Remove & let dry

For the sandwiches:

  1. Heat a pan over medium heat & put one slice of bread into the pan before sprinkling with cheese
  2. Top with the other bread slice & cook until done, about 3-4 minutes
