Dr Oz: Healthy Box Cake Recipes

Maybe you did, if you’re one of the thousands of people who shared their favorite boxed cake recipes with Doctor Oz. Today, the top three choices faced off, and Dr. Oz invited celebrity chef Big Daddy to help him choose a winner.

Big Daddy said this recipe wasn’t overly sweet, and it had the right amount of fruit and flavor.

Ingredients

  • 1 box Super Moist White Cake Mix
  • ½ cup light Coconut Milk
  • 1 ½ 20 oz. cans Crushed Pinapple
  • 1 1.5 oz. box Sugar Free Fat Free Vanilla Pudding Mix
  • 12 oz. Light Whipped Topping
  • 3 cups Skim Milk
  • Coconut Flakes
  • Cupcake Liners

Directions

  1. Preheat oven to 350.
  2. Prepare pudding, following box directions. Mix with ½ can pineapple & juice. Set aside.
  3. Line two muffin tins with cupcake liners.
  4. Mix cake with 1 can of pineapple, including juice.
  5. Pour batter into cupcake liners, filling up to ⅔.
  6. Bake for 18-23 minutes.
  7. Remove and let cool.
  8. Top with pudding and whipped topping.
  9. Garnish with coconut flakes.
  10. Refrigerate two hours or overnight.

Dr Oz: Dark Chocolate Berry Layer Cheesecake Recipe

Big Daddy said this recipe reminded him of one of his favorite chocolate desserts. He said he liked the chocolate content and density of this cake.

Ingredients

  • 1 box Devils Food Cake Mix
  • 4 egg whites
  • ½ cup Unsweetened Applesauce
  • 1 Tbsp Olive Oil

Cheese Filling

  • ¼ cup Part Skim Ricotta Cheese
  • 1 ½ oz. Dark Chocolate, melted
  • 1 packet Sugar Substitute
  • 1 Tbsp. Nonfat Yogurt, plain
  • Orange Zest

Fresh Berries

  • Your choice of fresh berries
  • Lemon Zest
  • 1 tsp. Fresh Squeezed Lemon Juice
  • 1 packet Sugar Substitute

Directions

  1. Whisk filling ingredients together until smooth
  2. Bake cake as described on box.
  3. Layer the cake with your cheese filling and berry mix.
  4. Optionally, add almond slivers or shaved dark chocolate for texture.

Big Daddy declared this cake the contest winner. The baker received a gold plated cake dish award to commemorate this accomplishment.

Ingredients

  • 1 Box Yellow Cake Mix
  • 3 Eggs
  • 1 cup Water
  • ¼ cup Olive Oil
  • 1 tsp. Vanilla Extract
  • 1 Tbsp Cinnamon
  • ¼ cup Greek Yogurt
  • 1 tsp Allspice
  • ¼ tsp. Himalayan Pink Salt
  • 1 tbsp. Molasses
  • 1 cup Carrots, finely grated (about two carrots)
  • 1 cup Zucchini, finely grated (about one small zucchini)
  • ⅓ cup Coconut, grated & unsweetened
  • 1 cup Toasted Walnuts, finely chopped

Frosting

  • 12 oz. Neufchatel (cream cheese substitute)
  • ¼ cup Maple Syrup
  • ¼ cup Confectioners Sugar
  • 1 Tbsp Lemon Juice
  • 1 tsp. Vanilla Extract
  • Lemon Zest

Directions

  1. Preheat oven to 325.
  2. Combine cake with water, eggs, yogurt & oil, mixing thoroughly.
  3. Add remaining ingredients: spices, veggies, nuts, and coconut.
  4. Blend thoroughly. Pour into two prepared 8” cake pans.
  5. Bake for 30-35 minutes.
  6. Let cool for a few minutes before frosting.
